Entrées for any Group Size

  • Deluxe Fajitas
    The Hyatt’s SWB Famous Fajitas with a choice of two meats (Chicken or Beef) or Fire-Roasted Veggies. Accompanied by Spanish rice, charro beans, chips, queso, tomatillo salsa, smoked onion salsa, cheddar cheese, guacamole, jalapeños, sour cream, and flour tortillas. Gluten-free and vegan options are available on request.
  • Southwest Mac & Cheese
    Choice of Grilled Chicken/Smoked Brisket/Pork Belly, cavatappi pasta, queso, jalapeno cornbread crumble, dinner rolls with sea salt butter, and house salad with cilantro ranch dressing

  • Texas Smokehouse Sampler (groups of 10 or more only)
    Two- and three-meat packages, with choice of Pulled Pork, Smoked Brisket, Hudson Smoked Sausage, or BBQ Chicken. Sides include honey BBQ baked beans, chef’s potato salad, creamy cole slaw, assorted relish tray, cheddar cornbread, buttermilk biscuits, whipped honey butter.
  • Box Lunch (Choice of two) – Each sandwich comes with Seasonal Whole Fruit, Assorted Kettle Chips, and a Chocolate Chunk Cookie
    • Roast Turkey with Gouda (Tomato, butter lettuce, and avocado hummus on a croissant) 
    • Sliced Roast Beef with Romaine Lettuce (Pickled red onion, tomato, and horseradish spread on a pretzel bun) 
    • Tuna Salad with Butter Lettuce (Shaved cucumber, tomato, and alfalfa sprouts on a croissant)

    Chef’s selection of assorted cheeses and cured meats (3 of each). Includes Texas ranch olive oil + balsamic reduction, pickles, olives, marinated artichoke hearts, seasonal jams & compotes, and crostini, lavash, and specialty crackers.
  • Party Time on the Boat (groups of 10 or more only)
    Two of each item per person:
    • Smoked Wings with Bourbon buffalo sauce, buttermilk dressing, and celery.
    • Smoked Chicken Quesadillas with pico de gallo & pepperjack cheese, and salsa.
    • Chopped Brisket Sliders with Dr. Pepper BBQ sauce.
